Chai Latte Pancakes


Hi loves!

I'm so excited to be back on my blog...from all the moves this past year it has been hard for me to stay consistent, but now that we are settled for a while I'll be back on here on a regular basis...yayyy.

What is the weather like where you live? I live in the sweet state of GA & you never know what the weather will be like when you wake up, but today we woke up to cold wood floors & and a breeze in the air....we have all the windows open and the curtains are flowing....I'm so in love with this time of year. Every time summer ends I cannot wait to get myself a pumpkin spice latte at Starbucks and be cozied up on the couch drinking Chai Lattes....I'm not the only one, right? Well since this time is here I wanted to share with you one of our favorite pancake recipes. What makes these pancakes so good is that it is a healthier version of pancakes yet still so amazing.

Have you ever heard of Young Living essential oils? I had never heard of them a year ago, but after a year of using them they have truly made such an amazing difference in our life. I love things that are so easy to incorporate into your life....and that's why I love essential oils....I can cook with them, use them as beauty & skin care products, clean with them, & the list goes on....but what I love most is that we don't have to use over-the-counter medicine anymore....these oils have totally taken the place of medicine in our home & that truly is a blessing!

So if you are in the fall mood like I am....you will love making this recipe that I threw together using my Thieves essential oil....& you'll make your spouse happy too ;) These are one of Blake's favorites.

Ingredients

* 1 cup plus 2 tablespoons of natural all purpose wheat flour

* 1/4 cup of all natural brown sugar

* 1 teaspoon of Clabber Girl gluten free baking powder

* 1 tablespoon of ground cinnamon

* 1/4 teaspoon of salt

* 2 organic eggs

* 1 cup of organic buttermilk

* 2 tablespoons of olive oil

* 3/4 teaspoon of vanilla extract

* 3 tablespoons of either espresso, regular strong coffee, or tea (I used regular Community Coffee Brand "Coffee & Chicory" flavor from my coffee this morning)

* 2 drops of thieves oil


























In a mixer combine the flour, sugar, baking powder, cinnamon, & salt. In a seperate bowl combine the eggs, buttermilk, oil, vanilla, coffee, & Thieves. Beat the liquids together & then pour into dry ingredients. Let mixer run on low until all blended. In a lightly greased skillet (I used coconut oil) drop batter by 1/4 cupful. Fry until golden brown, about 2 minutes on each side. Makes 7 pancakes.
